Delightful Cranberry Mousse Cups bursting with tartness and creamy sweetness, perfect for any occasion.
Ingredients

- 1 cup fresh cranberries
- 1/2 cup sugar (plus an extra 1/4 cup for the cranberries)
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1 tablespoon gelatin
- 2 tablespoons water
- 1 cup Greek yogurt
- Pinch of salt
Instructions
- In a saucepan, combine fresh cranberries and 1/4 cup sugar with a splash of water over medium heat. Cook until the cranberries burst and the mixture thickens, about 10-15 minutes. Set aside to cool.
- In a separate bowl, whip the heavy cream until soft peaks form. Gently fold in the vanilla extract and Greek yogurt.
- Dissolve the gelatin in 2 tablespoons of warm water, then add it to the whipped cream mixture, stirring well to combine.
- Layer the mousse in clear mini dessert cups, followed by a layer of the cooled cranberry mixture. Repeat until the cups are filled.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
For a lighter version, substitute heavy cream with a cool whip. You can also use frozen cranberries if fresh ones are unavailable.
