  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces brie cheese, rind removed and cut into small pieces
  • 1/4 cup chopped fresh parsley
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a medium saucepan over medium heat.
  3. Add the fresh cranberries to the pan and cook until they soften and burst, about 5 minutes.
  4. Stir in the honey, orange juice, ground cinnamon, ground ginger, salt, and black pepper, and cook for another 3-4 minutes until thickened. Remove from heat and set aside to cool.
  5. Cut a pocket in the center of each chicken breast without cutting all the way through.
  6. Stuff each chicken breast with brie cheese pieces and spoon cooled cranberry mixture over the cheese.
  7. Secure openings with toothpicks to keep filling in place.
  8. Heat a large oven-safe skillet over medium-high heat and sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.
  9. In a small bowl, combine the panko breadcrumbs and melted butter. Once the chicken is browned, spread this mixture over the top of each breast.
  10. Return the chicken to the skillet and transfer to the preheated oven. Bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  11. Let the chicken rest for 5 minutes before serving, then sprinkle with chopped parsley.

Notes

For best results, ensure the cranberry mixture cools before adding to the chicken. Use a meat thermometer to check doneness.
