- 2 large cucumbers
- 8 oz cream cheese, softened
- 1/4 cup sour cream
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh chives, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Slice the cucumbers into thick rounds, about 1/2 inch thick.
- In a bowl, mix together the softened cream cheese, sour cream, chopped dill, chopped chives, lemon juice, salt, and pepper until well combined.
- Top each cucumber slice with a dollop (about 1 tablespoon) of the herbed cheese mixture.
- Arrange on a serving platter and serve immediately or refrigerate for up to one hour before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 2 days. The cucumbers may lose some crispness over time.
