A warming soup filled with chicken, potatoes, and aromatic herbs that’s perfect for chilly nights or when you’re feeling under the weather.
Ingredients

- 1 pound chicken (breast or thighs)
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups chicken broth (or water with bouillon)
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, combine chicken, chopped onions, carrots, and celery.
- Pour in the chicken broth. Bring to a boil.
- Once boiling, reduce the heat to simmer. Cook for about 15 minutes, or until the chicken is cooked through.
- Remove the chicken and shred it using two forks.
- Return the shredded chicken to the pot.
- Add the diced potatoes, garlic, thyme, salt, and pepper.
- Simmer for another 20 minutes, or until the potatoes are tender.
- Taste and adjust seasoning if needed. Serve hot and garnish with fresh parsley if you like.
Notes
For a thicker soup, mash some of the potatoes in the pot. Use bone-in chicken for richer flavor.
