- 2 apples, peeled and sliced
- 1 cup apple cider

Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper on both sides, then add to the skillet. Cook until browned, about 5-7 minutes per side.
- Remove chicken from the skillet and set aside on a plate.
- In the same skillet, add sliced onion and apples. Sauté until the onions are translucent and the apples are tender.
- Pour in apple cider and add thyme. Stir to combine and let simmer for a minute.
- Return chicken to skillet, cover, and let simmer for about 20 minutes, or until chicken is fully cooked through.
- Serve chicken with cider sauce over rice or with a slice of crusty bread.
