- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1/4 cup pure maple syrup
- 1 large egg (or 1 tbsp flaxseed meal + 2.5 tbsp water)
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour (or gluten-free blend)
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup chocolate chips (optional, dairy-free if desired)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).
- Beat in the maple syrup, egg, and vanilla extract until well combined.
- In another bowl, whisk together flour, baking soda, cinnamon, and salt.
- Gradually add the dry mixture to the wet mixture and mix until just combined. If using, gently fold in chocolate chips.
- Drop the dough onto ungreased baking sheets with some space between each cookie.
- Bake for 10–12 minutes or until edges are lightly golden.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a chewy texture, do not overbake. Chilling the dough for at least 30 minutes can enhance flavor and thickness. Customize your mix-ins with nuts or dried fruit.
