A comforting dish that transforms simple root vegetables into a mouthwatering cheesy gratin, perfect as a side or vegetarian main.


Ingredients

  • 1 tablespoon unsalted butter (softened)
  • 1–2 long sweet potatoes, peeled
  • 3–4 large parsnips, ends trimmed and peeled
  • 3–5 small beets, peeled
  • 14 tablespoons heavy cream, divided
  • 4 ounces grated Parmesan, divided
  • 1 tablespoon fresh minced thyme, divided
  • 1 garlic clove, minced
  • 1 ounce shredded gruyere
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F. Grease a 3-quart baking dish with the softened butter.
  2. Slice sweet potatoes, parsnips, and beets into thin rounds. Transfer each sliced vegetable into its own bowl.
  3. Pour 4 tablespoons of cream over the sweet potatoes and parsnips, and 2 tablespoons over the beets. Top each bowl with ½ ounce of Parmesan and 1 teaspoon of thyme. Season with salt and pepper, then toss to coat.
  4. Pour the remaining ¼ cup of cream into the bottom of the prepared baking dish. Sprinkle with ½ ounce of Parmesan and the minced garlic.
  5. Layer the sweet potatoes, parsnips, and beets in the baking dish, creating beautiful rows until all vegetables are used.
  6. Season the top with salt, pepper, and sprinkle with the remaining Parmesan.
  7. Cover with foil and bake for 30 minutes, until vegetables start to soften.
  8. Uncover and sprinkle the gratin with shredded gruyere. Bake uncovered for an additional 18 to 20 minutes, until fork-tender, cheese is melted, and top is golden.
  9. Finish with a sprinkle of fresh thyme leaves. Serve warm and enjoy!

Notes

Feel free to swap out thyme for other herbs like rosemary or sage for different flavors. Leftovers can be stored in an airtight container for 3-5 days.
