Golden Cheese Steak Tortellini Casserole

Description

A hearty and cheesy casserole combining seared steak and delicious cheese tortellini, perfect for busy weeknights.


Ingredients

  • 1 lb sirloin steak or steak tips, cut into bite-sized pieces
  • Salt & black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 2 cups milk (whole milk or 2%)
  • 1 cup beef broth (or vegetable stock)
  • 2 cups shredded sharp cheddar cheese
  • 1 tsp Dijon mustard (optional)
  • 1 tsp paprika (or smoked paprika)
  • 1 package (20 oz) cheese tortellini, fresh or refrigerated
  • ½ cup shredded mozzarella (for topping)
  • 2 tbsp chopped parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the steak pieces with salt and pepper. Heat olive oil in a skillet over medium-high heat, then sear the steak for 2–3 minutes on each side until browned. Remove the steak and set it aside.
  3. In the same skillet, melt butter over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant. Stir in the flour to make a roux and cook for 1 minute.
  4. Gradually whisk in the milk and beef broth until the mixture is smooth. Stir in the shredded cheddar cheese, Dijon mustard, and paprika until creamy.
  5. Cook the tortellini according to the package directions, but undercook slightly. Drain and toss with a little olive oil to prevent sticking.
  6. Grease a 9×13” baking dish. Combine the cooked tortellini, seared steak, and cheese sauce in the dish, mixing gently.
  7. Sprinkle shredded mozzarella over the top.
  8. Bake uncovered for 20–25 minutes until the cheese is bubbly and golden. Garnish with chopped parsley before serving.

Notes

Serve warm with a side salad or steamed veggies. Ideal for leftovers, can be stored in the fridge for 3–4 days or frozen for up to 2 months.
