Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 3 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/2 cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil (for bruschetta)
  • 12 oz pasta of choice (such as penne or spaghetti)
  • 1/2 cup grated Parmesan cheese
  • Optional: fresh mozzarella pearls for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with olive oil, salt, pepper, and Italian seasoning.
  3. In a large oven-proof skillet over medium heat, sear the chicken breasts for about 3-5 minutes on each side until golden brown, but not fully cooked.
  4. Transfer the skillet to the preheated oven and bake the chicken for 15-20 minutes or until fully cooked.
  5. Prepare the bruschetta topping by mixing the halved cherry tomatoes, minced garlic, chopped basil, balsamic vinegar, and olive oil in a bowl. Season with salt and pepper to taste and set aside.
  6. Cook pasta according to package instructions until al dente, then drain and set aside.
  7. Once the chicken is done, let it rest for a few minutes before slicing it into strips.
  8. In a large mixing bowl, combine the cooked pasta with half of the bruschetta mixture and half of the grated Parmesan cheese. Toss well.
  9. Plate the pasta and top it with sliced chicken, the remaining bruschetta mixture, and additional Parmesan cheese if desired.
  10. For added flavor, top with fresh mozzarella pearls and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat gently on the stove with a splash of water or broth to maintain moisture.
