- 4 large onions, thinly sliced
- 4 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon sugar
- 8 cups beef or vegetable broth
- 1 cup dry white wine (optional)
- 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
- Salt and pepper to taste
- Baguette, sliced
- Grated cheese (Gruyère or Swiss)
Instructions
- In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized (about 30-40 minutes). Add sugar to help the caramelization process.
- Stir in the minced garlic and cook for an additional minute.
- Add the wine (if using) and deglaze the pot, scraping up any browned bits.
- Add the broth and thyme. Season with salt and pepper. Bring to a simmer and cook for 20-30 minutes.
- Preheat the broiler. Ladle the soup into oven-safe bowls, top with baguette slices, and sprinkle with cheese.
- Place the bowls under the broiler until the cheese is bubbly and golden.
- Serve hot and enjoy!
Notes
Use a mix of yellow and sweet onions for added depth of flavor. If you want to skip the white wine, substitute with broth and add apple cider vinegar for acidity.
