- 1 beef tenderloin roast (about 4–6 pounds)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
- 1 cup chicken or beef broth (optional)
- 1 tablespoon apple cider vinegar (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the beef tenderloin dry with paper towels and season generously with salt and pepper.
- In a small bowl, mix together the olive oil, garlic, rosemary, and thyme. Rub this mixture all over the beef tenderloin.
- Heat a large skillet over medium-high heat. Sear the beef on all sides until browned, about 2-3 minutes per side.
- Transfer the beef tenderloin to a roasting pan.
- If using, pour the chicken or beef broth and apple cider vinegar into the bottom of the pan.
- Roast in the preheated oven for 20-30 minutes, or until the internal temperature reaches your desired doneness (125°F for medium-rare).
- Remove from the oven and let rest for 10-15 minutes before slicing.
