- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add beef cubes and brown on all sides.
- Remove beef and set aside. In the same pot, sauté onions and garlic until soft.
- Stir in carrots and potatoes, cooking for a few minutes.
- Add the beef back to the pot along with beef broth, red wine (if using), tomato paste, Worcestershire sauce, thyme, paprika, salt, and pepper.
- Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, or until beef is tender.
- Adjust seasoning if needed and serve hot, garnished with fresh parsley.
Notes
For a thicker stew, consider adding a cornstarch slurry towards the end of cooking.
