- 1 ½ lbs (680 g) beef chuck or flank steak, thinly sliced
- 1 cup (240 ml) low-sodium beef broth
- ½ cup (120 ml) soy sauce (or tamari for gluten-free)
- ¼ cup (60 ml) honey or brown sugar
- 2 tbsp cornstarch + 2 tbsp water (for thickening)
- 3 cups (270 g) broccoli florets
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp sesame oil
- 2 cups cooked white or brown rice (for serving)
- Optional: sliced green onions, sesame seeds
Instructions
- Add sliced beef, beef broth, soy sauce, honey, garlic, ginger, and sesame oil to the crockpot. Stir to coat evenly.
- Cover and cook on LOW for 5–6 hours or HIGH for 3 hours until beef is tender.
- Mix cornstarch and water to make a slurry. Pour into crockpot during the last 30 minutes.
- Add broccoli and cook until bright green and crisp-tender.
Notes
Slice beef thinly across the grain for tenderness. Add carrots or bell peppers for extra color. Double the sauce if serving with noodles. Freeze sauce and beef raw in a freezer bag for easy prep. For spice, add chili flakes or Sriracha. Serve over cauliflower rice for a low-carb option.
