Instructions
- In a large skillet, heat a drizzle of olive oil over medium heat.
- Add minced garlic and sauté for about a minute until fragrant.
- Pour in the canned diced tomatoes and bring to a gentle simmer.
- Stir in the heavy cream and let it cook for another 3-4 minutes.
- Add the gnocchi to the skillet. Cook for 2-3 minutes, or until they float to the top.
- Gently fold in fresh spinach until it wilts.
- Serve warm, garnished with grated Parmesan cheese.
