Description
A quick and satisfying soup made with fresh broccoli and creamy cheddar cheese, perfect for any day of the week.
Ingredients

- 2 cups of broccoli florets
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 cup of grated cheddar cheese
- 1 cup of heavy cream
- Salt and pepper to taste
- 2 tablespoons of olive oil or butter
Instructions
- In a large pot, heat olive oil or butter over medium heat.
- Add diced onion and cook until translucent, about 5 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Add the broccoli florets and broth. Bring to a boil, then reduce heat and simmer for 10-15 minutes until the broccoli is tender.
- Once the broccoli is cooked, use an immersion blender to puree the soup until smooth.
- Return the soup to the pot and stir in heavy cream, grated cheddar cheese, salt, and pepper. Heat over low heat until the cheese is melted.
- Serve hot and enjoy!
Notes
For a thicker soup, blend longer or add more cheese. You can customize with other veggies or proteins.
