Ingredients

Scale
  • 1 lb ground turkey
  • 1 small head green cabbage (chopped, about 4 cups)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup uncooked long-grain rice (jasmine or basmati)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1/2 cup chicken broth (or water)
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon thyme
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 1 cup shredded cheddar or mozzarella cheese (optional, for topping)

Instructions

Step 1: Prepare the Ingredients

  1. Preheat your oven to 350°F (175°C).
  2. Chop the cabbage into bite-sized pieces and set aside.

Step 2: Brown the Turkey & Onions

  1. Heat a large skillet over medium heat. Add ground turkey and cook for about 5-7 minutes, breaking it apart with a spoon until browned.
  2. Add diced onion and minced garlic. Sauté for another 3 minutes until softened.
  3. Stir in oregano, paprika, garlic powder, thyme, salt, and pepper for extra flavor.

Step 3: Assemble the Casserole

  1. Lightly grease a 9×13-inch baking dish.
  2. Spread half of the chopped cabbage evenly in the bottom of the dish.
  3. Sprinkle uncooked rice over the cabbage layer.
  4. Add the cooked turkey mixture on top, spreading it evenly.
  5. Pour diced tomatoes, tomato sauce, and chicken broth over the casserole, ensuring everything is coated.
  6. Top with the remaining cabbage.

Step 4: Bake the Casserole

  1. Cover the dish tightly with foil to trap moisture.
  2. Bake for 50-60 minutes, or until the rice and cabbage are tender.

Step 5: Add Cheese & Serve

  1. (Optional) Remove the foil and sprinkle shredded cheese on top. Bake uncovered for an additional 5-10 minutes until melted and bubbly.
  2. Let the casserole rest for 5 minutes before serving.

Storage & Reheating Tips:

  • Refrigerate: Store leftovers in an airtight container for up to 3 days.
  • Freeze: Freeze for up to 3 months (wrap tightly in plastic + foil).
  • Reheat: Warm in a 350°F oven for 15-20 minutes, or microwave in short bursts with a splash of broth.

Notes

  • Best Rice Choice: Long-grain rice (jasmine or basmati) works best. If using brown rice, increase baking time by 10-15 minutes and add extra broth.
  • Make it Vegetarian: Replace ground turkey with chopped mushrooms, lentils, or plant-based meat.
  • Extra Flavor Boost: Add a splash of Worcestershire sauce or balsamic vinegar to the tomato mixture for depth.
  • Spice Level: Add red pepper flakes or cayenne pepper for a little heat.
