Ingredients

  • 1 large English cucumber
  • 4 oz (115g) smoked salmon, thinly sliced
  • 4 oz (115g) cream cheese, softened
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, finely chopped (plus extra for garnish)
  • 1 tbsp chopped chives or green onions
  • Salt and pepper, to taste
  • Optional topping: 1 tbsp capers or finely diced red onion

Instructions

  1. Wash and dry cucumber. Slice into ¼-inch rounds and pat dry with a paper towel. Arrange on a serving tray.
  2. In a small bowl, mix cream cheese, lemon juice, dill, chives, salt, and pepper until smooth and creamy.
  3. Spread or pipe a small dollop of herbed cream cheese on each cucumber slice. Top with a ribbon of smoked salmon. Garnish with dill or capers if desired.
