- 1 large English cucumber
- 4 oz (115g) smoked salmon, thinly sliced
- 4 oz (115g) cream cheese, softened
- 1 tbsp lemon juice
- 1 tbsp fresh dill, finely chopped (plus extra for garnish)
- 1 tbsp chopped chives or green onions
- Salt and pepper, to taste
- Optional topping: 1 tbsp capers or finely diced red onion
Instructions
- Wash and dry cucumber. Slice into ¼-inch rounds and pat dry with a paper towel. Arrange on a serving tray.
- In a small bowl, mix cream cheese, lemon juice, dill, chives, salt, and pepper until smooth and creamy.
- Spread or pipe a small dollop of herbed cream cheese on each cucumber slice. Top with a ribbon of smoked salmon. Garnish with dill or capers if desired.
Notes
Can be assembled up to 2 hours ahead of time. Keep refrigerated until serving.
