Description
An extra-loaded, big-batch guacamole with bold flavor and smart storage so it stays green up to 48 hours. Tested twice for party reliability.
Ingredients
Scale
- 4 large ripe avocados (about 2 lb / 900 g), pitted & scooped
- 2 Tbsp (30 ml) fresh lime juice, plus more to taste
- 3/4 tsp fine sea salt, plus more to taste
- 1 small garlic clove, finely minced
- 1/3 cup (50 g) finely chopped red onion
- 1–2 jalapeños, seeded and finely chopped
- 1/3 cup (15 g) chopped fresh cilantro
- 1 cup (150 g) diced Roma tomato, drained
- 1/4 tsp ground cumin (optional)
- Monster mix-ins (choose 2–3): 1/2 cup (85 g) black beans; 1/2 cup (75 g) charred corn; 1/4 cup (30 g) diced mango or pineapple; 2 Tbsp (20 g) toasted pepitas; finishing pinch flaky salt
Instructions
- Mash the base: In a large bowl, combine avocado, lime juice, and salt. Mash until mostly smooth with some chunks.
- Fold in flavor: Stir in garlic, red onion, jalapeño, cilantro, tomato, and cumin. Taste and adjust salt and lime.
- Make it “monster”: Gently fold in chosen mix-ins. Press plastic wrap directly on the surface until serving.
Notes
Dairy-free & gluten-free. For milder heat, use only half a jalapeño and remove seeds. For budget-friendly volume, add beans and corn. For best color, add tomato close to serving and keep plastic wrap pressed on the surface.
