Description

A hearty and comforting beef stew perfect for chilly days, made easily in a crockpot.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 bay leaves

Instructions

  1. In a large skillet, brown the beef cubes on all sides. Transfer to the crockpot.
  2. Add the carrots, potatoes, onion, and garlic to the crockpot.
  3. Pour in the beef broth, red wine (if using), and Worcestershire sauce.
  4. Season with thyme, salt, pepper, and add the bay leaves.
  5. Cover and cook on low for 480 minutes or on high for 240 minutes until the beef is tender.
  6. Discard the bay leaves and serve warm.

Notes

For extra flavor, consider adding a tablespoon of tomato paste. You can mix in different root vegetables for variety and richness. For a thicker stew, mix cornstarch with water and stir in during the last 30 minutes.
