A hearty and comforting beef stew perfect for chilly days, made easily in a crockpot.
Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 4 carrots, sliced
- 4 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 bay leaves
Instructions
- In a large skillet, brown the beef cubes on all sides. Transfer to the crockpot.
- Add the carrots, potatoes, onion, and garlic to the crockpot.
- Pour in the beef broth, red wine (if using), and Worcestershire sauce.
- Season with thyme, salt, pepper, and add the bay leaves.
- Cover and cook on low for 480 minutes or on high for 240 minutes until the beef is tender.
- Discard the bay leaves and serve warm.
Notes
For extra flavor, consider adding a tablespoon of tomato paste. You can mix in different root vegetables for variety and richness. For a thicker stew, mix cornstarch with water and stir in during the last 30 minutes.
