  • Author: Dominique
  • Total Time: 55 minutes
  • Yield: 6-7 wraps 1x

Description

This Chipotle Chicken Wrap is a perfect combination of smoky, spicy, and creamy flavors wrapped in a soft tortilla. Made with marinated chipotle chicken, fresh veggies, and a tangy yogurt sauce, it’s a quick and satisfying meal for lunch, dinner, or meal prep.

Ingredients

Scale

Ingredients:

For the Chicken:

  • 2 lbs chicken thighs, cubed (or chicken breast)
  • 68 chipotle peppers in adobo sauce (adjust to taste)
  • 34 cloves garlic, minced
  • 12 tbsp lemon juice
  • 3 tbsp oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper

For the Chipotle Yogurt Sauce:

  • 56 tbsp plain yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 ½ tbsp reserved chipotle sauce
  • 1 tbsp fresh parsley, chopped

For the Wrap:

  • 67 flour tortillas (or whole wheat/gluten-free)
  • 1 cup shredded mozzarella cheese
  • 1 red onion, sliced
  • 1 cup mixed bell peppers, chopped
  • 1 cup Romaine lettuce, shredded

Instructions

  1. Prepare the Marinade: Blend chipotle peppers, garlic, lemon juice, salt, and black pepper until smooth. Reserve 1 ½ tbsp for the sauce.
  2. Marinate the Chicken: Coat the chicken with the marinade and let it sit for at least 30 minutes (or overnight for deeper flavor).
  3. Cook the Chicken: Heat a skillet over medium-high heat and cook the marinated chicken for 8-10 minutes until browned and fully cooked.
  4. Make the Sauce: In a small bowl, mix yogurt, mayonnaise, lemon juice, garlic powder, salt, pepper, and the reserved chipotle sauce. Stir in fresh parsley.
  5. Assemble the Wrap: Lay a tortilla flat and add cooked chicken, veggies, cheese, and drizzle with sauce. Roll tightly, tucking in the sides.
  6. Grill the Wrap: Heat a skillet and cook the wrap on both sides for 2-3 minutes until crispy and golden.
  7. Serve and Enjoy!

Recipe Notes:

  • Milder Option: Reduce the number of chipotle peppers or remove the seeds for less heat.
  • Vegetarian Substitute: Replace chicken with grilled tofu or roasted veggies like zucchini and bell peppers.
  • Low-Carb Alternative: Use lettuce leaves instead of tortillas for a lighter version.
  • Make-Ahead Tip: Prepare the chicken and sauce ahead of time for easy meal prep.

Notes

  • Adjusting Spice Level: Reduce the number of chipotle peppers or remove seeds for a milder taste.
