- 1 pound boneless chicken thighs
- 1 jar salsa
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
Instructions
- Place the boneless chicken thighs in the crockpot.
- Pour the salsa on top of the chicken.
- Add the drained black beans and corn.
- Sprinkle the taco seasoning evenly over everything.
- Stir gently to mix all the ingredients.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
- When done, shred the chicken with two forks and mix everything well before serving.
Notes
Use boneless chicken for easy shredding. Feel free to adjust the level of salsa to your taste. You can also add veggies like bell peppers or onions for extra flavor.
