Ingredients

Scale
  • 1 cup arborio rice
  • 1 ½ cups chicken broth (hot)
  • 1 tbsp butter
  • 1 tbsp olive oil
  • ½ onion, diced
  • ½ tsp salt
  • Zest of 1 lime
  • Juice of 1 lime
  • 1 lb ground beef
  • 1 tbsp taco seasoning
  • 1 cup refried beans
  • ½ cup blue cheese, crumbled
  • ½ cup shredded cheddar cheese
  • 1 tbsp cornstarch
  • 1 tsp baking powder
  • ½ tsp citric acid (optional)
  • ½ tsp sodium bicarbonate (optional)
  • 2 eggs, beaten
  • 1 ½ cups crushed tortilla chips
  • 1 cup all-purpose flour
  • Vegetable oil, for frying

Instructions

  • Prepare the Rice:

    • Heat butter and olive oil in a pan over medium heat.
    • Add diced onion and sauté until translucent.
    • Stir in arborio rice and toast for 2 minutes until fragrant.
    • Gradually add hot chicken broth, stirring frequently.
    • Once creamy, mix in lime zest, lime juice, and salt.
    • Set aside and let cool.
  • Cook the Ground Beef:

    • In a skillet over medium heat, cook the ground beef until browned.
    • Add taco seasoning and mix well.
    • Stir in refried beans and blue cheese until combined.
    • Let cool, then roll the mixture into small balls.
  • Assemble the Burrito Bombs:

    • Take a portion of rice and flatten it in your hand.
    • Wrap the rice around the beef filling, shaping it into a compact ball.
    • Repeat with remaining ingredients.
  • Coat the Burrito Bombs:

    • Set up three bowls:
      1. Flour
      2. Beaten eggs
      3. Crushed tortilla chips mixed with cornstarch, baking powder, and seasoning.
    • Roll each burrito bomb in flour, dip into eggs, then coat with the tortilla chip mixture.
  • Fry to Perfection:

    • Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
    • Fry each burrito bomb until golden brown and crispy, about 2-3 minutes.
    • Remove and place on a paper towel to drain excess oil.
  • Serve and Enjoy:

    • Pair with salsa, guacamole, or a zesty cheese sauce.
    • Enjoy while hot and crispy!

Notes

  • For a healthier version, try air frying at 400°F (200°C) for 10-12 minutes instead of deep frying.
  • Swap blue cheese for cheddar or Monterey Jack for a milder taste.
  • If you prefer a spicier kick, add diced jalapeños to the beef filling.
