Ingredients
- 1 cup arborio rice
- 1 ½ cups chicken broth (hot)
- 1 tbsp butter
- 1 tbsp olive oil
- ½ onion, diced
- ½ tsp salt
- Zest of 1 lime
- Juice of 1 lime
- 1 lb ground beef
- 1 tbsp taco seasoning
- 1 cup refried beans
- ½ cup blue cheese, crumbled
- ½ cup shredded cheddar cheese
- 1 tbsp cornstarch
- 1 tsp baking powder
- ½ tsp citric acid (optional)
- ½ tsp sodium bicarbonate (optional)
- 2 eggs, beaten
- 1 ½ cups crushed tortilla chips
- 1 cup all-purpose flour
- Vegetable oil, for frying
Instructions
Prepare the Rice:
- Heat butter and olive oil in a pan over medium heat.
- Add diced onion and sauté until translucent.
- Stir in arborio rice and toast for 2 minutes until fragrant.
- Gradually add hot chicken broth, stirring frequently.
- Once creamy, mix in lime zest, lime juice, and salt.
- Set aside and let cool.
Cook the Ground Beef:
- In a skillet over medium heat, cook the ground beef until browned.
- Add taco seasoning and mix well.

- Let cool, then roll the mixture into small balls.
